Method

  1. 01

Warm the stock and prep the cuttlefish

Warm stock in a saucepan and keep it just below a simmer. Pat cuttlefish dry and cut into even pieces; keep tentacles in short clusters for a distinct texture.

  2. 02

    Sear the cuttlefish briefly

Heat 15 ml olive oil in a wide heavy pan over high heat. Sear cuttlefish in two batches for about 1 minute each, just until the edges turn opaque; transfer immediately so it does not toughen.

Soften the onion and toast rice

Lower heat to medium and add remaining oil. Cook onion until translucent, then add garlic for 30 seconds. Stir in rice and toast 2 minutes until the grains look pearly at the edges.

Deglaze with wine and add ink

Pour in white wine and stir, scraping the pan until the sharp alcohol smell fades. Mix 6 g cuttlefish ink into the warm stock and keep the remaining ink for adjusting the colour near the end.

    Cook the rice gradually

Add one ladle of inked stock and stir gently until nearly absorbed. Continue adding warm stock a ladle at a time for about 18 minutes, keeping a gentle simmer and stirring regularly.

  6. 06

    Return cuttlefish and check texture

When the rice is creamy but still gently firm at the centre, return cuttlefish and any juices. Stir 3–4 minutes until the pieces are fully hot and opaque; if needed, add a final splash of stock. The rice should flow slowly when the pan is tilted.

    Season, rest briefly and serve

Stir in remaining ink only if a deeper colour is needed, then season carefully with salt because the stock may already be seasoned. Fold in parsley, rest 2 minutes off heat and serve with lemon.
