Method

  1. 01

Bring the stock to a simmer

Bring 900 ml stock to a boil in a 2.5 L pot over medium-high heat, then reduce to a lively simmer. Skim any loose anchovy particles.

  2. 02

    Dissolve the doenjang

Put 70 g doenjang in a fine sieve, lower it into the hot stock, and press with a spoon until only coarse soybean skins remain. Discard those skins for a smooth broth.

    Cook potato and onion

Add potato and onion, cover slightly ajar, and simmer 10 minutes. A knife should enter the outside of a potato cube but meet resistance in the centre.

    Add zucchini and mushrooms

Add zucchini, shiitake, garlic, and gochugaru. Simmer uncovered for 6 minutes, stirring once from the bottom so the paste does not settle and scorch.

    Warm the tofu gently

Slide in the tofu cubes and simmer 5 minutes. Move them only by shaking the pot gently; the potato should become tender without breaking apart.

    Add fresh aromatics

Add scallions and green chile and simmer 2 minutes. Taste now; if the broth is too strong, add 30 ml hot water at a time rather than masking it with sugar.

    Rest before serving

Turn off the heat and rest the covered stew for 3 minutes so the suspended paste settles into an even broth. Ladle into four bowls with equal potato, tofu, and vegetables.
