Full English Breakfast
A coordinated cooked breakfast of back bacon, pork sausages, black pudding, eggs and fried bread, with mushrooms, tomatoes and beans sharing the plate. The challenge is not any single technique but timing each component so the crisp items stay crisp and the eggs arrive last.

Start the sausages in the oven
Heat the oven to 200°C. Put the 8 sausages on a rack over a tray and roast for 25–30 minutes, turning after 15 minutes, until evenly browned and the centres reach at least 71°C.

Warm the beans gently
Put the 400 g baked beans in a small saucepan over low heat for 12–15 minutes, stirring occasionally. Keep them at a gentle simmer rather than boiling hard so the sauce stays thick.

Cook the tomatoes
Heat 10 ml oil in a large skillet over medium heat. Put the 400 g tomato halves cut-side down, season with 1 g salt and 0.5 g pepper, and cook 5–6 minutes. Turn and cook 2 minutes more until softened but still holding shape.

Brown the mushrooms
In a second skillet melt the 30 g butter over medium-high heat. Add the 300 g mushrooms in one layer and cook 7–9 minutes without salting at first. Once browned, season with 1 g salt and 0.5 g pepper.

Crisp the black pudding
Heat 5 ml oil over medium heat. Fry the 8 black-pudding slices for 3–4 minutes per side until the cut surfaces are dark and crisp while the centres remain tender. Move to a warm uncovered tray.

Cook the back bacon
Use the same pan over medium-high heat. Cook the 8 bacon rashers for 2–3 minutes per side until the fat edges colour and the lean remains juicy. Hold uncovered with the black pudding.

Fry the bread
Add 10 ml oil to the bacon pan and fry the 4 bread slices for 2–3 minutes per side until deeply golden and crisp. Drain upright or on a rack so the surfaces do not steam soft.

Fry the eggs last
Add the final 5 ml oil to a clean non-stick pan over medium-low heat. Crack in the 4 eggs, season with the remaining 4 g salt and 2 g pepper, and cook 3–5 minutes until the whites are fully set but the yolks remain soft.

Assemble four hot plates
Divide the sausages, bacon, black pudding, mushrooms, tomatoes, beans and fried bread among 4 warmed plates and add one freshly fried egg to each. Serve immediately so the egg and fried bread do not wait.
