Method

Loosen the cold rice
Break 400 g cold rice into individual grains with damp fingers or a rice paddle. Remove hard dried clumps rather than adding water, which would make the pan steam.

Caramelize onion and kimchi
Heat neutral oil in a wide skillet over medium-high. Cook onion for 2 minutes, add kimchi, and stir-fry 4 minutes until moisture is mostly gone and the edges begin to brown.

Concentrate the red sauce
Add kimchi brine and gochujang and boil for 60–90 seconds, stirring, until a spatula leaves a clean trail across the pan. This prevents wet fried rice.

Fry until grains separate
Add rice and press out every clump, then stir-fry over high heat for 4 minutes. Spread it flat for the last 60 seconds without stirring so some grains lightly caramelize without burning.

Finish without an egg
Turn off the heat and fold in sesame oil, 30 g scallions, and sesame seeds. Plate immediately and scatter the remaining 10 g scallions; add no egg or extra garnish so the finished dish matches the photograph.
