Prepare the snow
Pack clean snow into a shallow metal pan to a depth of at least 4 cm. Keep it outside or over a larger tray of ice while the syrup cooks.

Heat the maple syrup
Pour syrup into a tall heavy saucepan. If using the optional salt, swirl it into the cold syrup first; bring to a steady boil over medium-high heat and do not stir once boiling. Clip on a candy thermometer and watch for boil-over.

Cook to the soft-ball stage
Boil until the syrup reaches 234°F (112°C), adjusting heat as needed so it bubbles without climbing the sides. Remove the pan from the heat immediately.

Pour thin ribbons on snow
Let the bubbling settle for 30 seconds. Slowly pour a narrow ribbon over the packed snow in 8 short parallel strips, leaving room between them.

Roll and serve promptly
Wait 15–30 seconds until the syrup is tacky but still pliable. Place a stick at the edge of one strip and roll it toward you; eat immediately before it becomes icy.
