Pastitsio

Greek pastitsio stacks tubular pasta, aromatic tomato-beef sauce and a generous béchamel layer into a sliceable baked casserole. Cinnamon and nutmeg give the dish its warm signature without making it sweet.

Cook the pasta short of done

Boil the pasta in salted water for 2 minutes less than the package time. Drain well and toss with 30 ml olive oil so the tubes stay separate.

  5. 05

    Bind the pasta base

Cool the pasta for 5 minutes. Mix in 1 beaten egg, the feta, 2 g salt and the remaining pepper, then arrange the tubes lengthwise in a 25 x 35 cm baking dish.

  7. 07

    Layer the meat sauce

Heat the oven to 180°C. Spread the reduced meat sauce evenly over the aligned pasta, pressing only lightly so the pasta base stays defined.

  9. 09

    Cap with béchamel

Pour the béchamel over the meat layer and smooth it without mixing the layers. Sprinkle the remaining 50 g grated cheese evenly over the surface.
