Reduce the wine
Pour in wine and stir until almost completely absorbed, about 2 minutes. The pan should smell mellow rather than sharply alcoholic.

Add stock gradually
Add hot stock 150 ml at a time, stirring often and waiting until each addition is mostly absorbed before adding more. After 10 minutes stir in the saffron stock. Continue 6–8 minutes until the rice is al dente and flows loosely.

Mantecare off heat
Remove from heat. Beat in remaining 35 g butter and Parmigiano for 60–90 seconds, adding a splash of stock if needed. Rest 2 minutes, taste for salt and serve while the risotto slowly spreads on the plate.
