German recipe

Bienenstich

A German yeast cake with a caramelized honey-almond crown and a cool vanilla cream filling. The contrast is the point: soft enriched bread-like crumb, brittle nutty topping and a smooth chilled centre that keeps each slice light enough to eat with coffee.

    Cool and split the cake

Cool the baked cake completely for at least 60 minutes. Use a serrated knife to split it horizontally into 2 even layers. Cut the almond top into 12 wedges while it is separate so the finished filling will not squash later.

    Lighten the cold filling
