    First bake

Bake at 170°C for 22–25 minutes until the logs are pale golden and firm at the edges but still slightly soft in the centre. Cool on the tray for 12 minutes.

    Slice on the diagonal

Lower oven to 150°C. With a serrated knife, cut each warm log diagonally into 1.5 cm slices using a gentle sawing motion so the whole almonds do not tear the crumb.

    Second bake until crisp

Lay slices flat and bake at 150°C for 8 minutes. Turn each slice and bake another 8–10 minutes until dry and crisp but the almonds are not scorched. Cool completely on a rack.
