Method

    Marinate the chicken

Mix yogurt, ginger-garlic, biryani masala, chile, lemon, and 7 g salt. Coat chicken deeply around joints, cover, and refrigerate 2–4 hours; do not use sour yogurt.

  2. 02

    Prepare fried onions and herbs

Fry sliced onions in batches at 160–170°C until deep gold, drain on a rack, and cool crisp. Wash mint and cilantro, dry completely, and keep each component separate for layering.

  3. 03

    Soak and drain the rice

Rinse rice until water is nearly clear, soak in cool water 30 minutes, then drain in a sieve for 10 minutes. Mix saffron into warm milk and leave it to bloom.

  4. 04

    Parboil rice to seventy percent

Boil 3 L water with cardamom, bay, cinnamon, and 5 g salt. Add drained rice and boil 5–7 minutes until a grain breaks with a firm white core; drain immediately and spread gently.

  5. 05

    Build the chicken base

Spread 30 g ghee in a heavy 5 L pot. Arrange marinated chicken in one snug layer with all marinade, placing thicker joints near the hotter centre; scatter one-third fried onion and herbs.

  6. 06

    Layer rice and aromatics

Spread half the rice without pressing, add half the remaining onion and herbs, then the rest of the rice. Finish with remaining onion, herbs, saffron milk, and 50 g ghee in an even drizzle.

  7. 07

    Seal the pot for dum

Cover rice with parchment, then a tight lid; seal the rim with foil or dough so steam cannot escape. Set the pot over medium-high heat for 8 minutes until steam builds.

  8. 08

    Cook slowly on dum

Move the sealed pot onto a heavy griddle, reduce heat to the lowest setting, and cook 25 minutes. Turn off heat and rest sealed 20 minutes; opening early loses the steam that finishes the rice and chicken.

    Verify, lift, and serve

Open away from your face. Check the thickest chicken reaches 74°C and rice is separate with no hard core. Rest uncovered 5 minutes, then lift from the bottom so each serving includes chicken and layered rice.
