  1. 01

    Lower chicken into seasoned water

Add 50 g sliced ginger, scallions, and 15 g salt to boiling water. Lower chicken breast-side down, lifting it out and back in three times to warm the cavity; ensure it is fully submerged.

    Poach below a boil

When water returns to a bare simmer, cover, lower heat, and hold at 82–88°C for 35 minutes. Turn off heat and leave covered 25 minutes; do not repeatedly open the lid.

Verify and chill the chicken skin

Check the deepest thigh without touching bone reaches 74°C. If lower, return to 82–88°C broth in 5-minute intervals. Transfer with clean tongs to ice water for 5 minutes, then drain on a clean rack for 15 minutes; reserve all broth.

    Make the fermented soybean sauce

Pound 30 g ginger, 30 g garlic, and chiles to a paste. Stir with fermented soybean paste, vinegar, soy sauce, palm sugar, and 30 ml hot chicken broth until sugar dissolves; refrigerate half and keep half for serving.

Render or warm the chicken fat

    Fry rice aromatics

    Cook the chicken-fat rice

Transfer rice to a cooker or tight-lidded pot and add 540 ml strained hot chicken broth. Cook one normal white-rice cycle, or bring to a boil, cover, cook on the lowest heat 15 minutes, then rest off heat 15 minutes before fluffing.

    Clarify the serving broth

Strain 1.2 L remaining chicken broth through a fine sieve into a clean pot and skim fat. Add winter melon and simmer 12–15 minutes until translucent and tender but intact; season with the remaining 10 g salt only as needed.

    Assemble the complete set

Place 140–160 g sliced chicken beside each rice portion, add cucumber, and spoon a little warm broth over chicken skin. Serve each plate with soybean sauce and a separate bowl of winter-melon broth; all chicken should still be warm.
