Method

  1. 01

    Season and simmer the beef

Put beef in a pot with half the onion, 3 g salt and 500 ml stock. Cover and simmer until fork-tender, about 45 minutes; keep the cooking liquid.

    Make the egusi paste

Mix ground egusi with 180 ml cool stock or water to form a thick, spoonable paste. Let it stand while the stew base cooks so the seeds hydrate evenly.

  3. 03

    Build the red palm-oil base

Warm palm oil in a heavy pot over medium-low; do not let it smoke. Add remaining onion and chopped bell pepper, cook until softened, then add blended chile and crayfish and stir until fragrant.

Whisk the egusi into the broth

Stir in the egusi paste in small spoonfuls, leaving soft clusters rather than dissolving it completely. Add the beef cooking liquid and remaining stock; bring to a gentle simmer.

    Simmer until the egusi sets

Cover partly and simmer gently for 20–25 minutes, stirring around the bottom occasionally so the seed clusters cook through without sticking. The surface oil should begin to show.

  6. 06

Add meat, smoked fish and greens

Add cooked beef, flaked smoked fish and remaining salt. Simmer 8 minutes, then fold in chopped greens for the final 3–4 minutes until just wilted. Taste and adjust seasoning.

    Serve with a swallow

Ladle into warm bowls and serve with eba, pounded yam or semolina fufu for scooping. Keep the swallow covered so it stays soft and warm.
