Method

  1. 01

    Brown and tenderize the beef

Heat 20 ml oil in a heavy pot over medium-high. Brown beef in batches, season with 3 g salt, add 300 ml stock, cover and simmer until nearly tender. Lift the beef out and reserve the liquid.

    Brown the onions deeply

Add remaining oil and sliced onions. Cook over medium, stirring often, until deep golden-brown and reduced; lower heat if the edges begin to burn.

    Toast the whole spices

Add garlic, ginger, cloves, cardamom, cinnamon, cumin and black pepper. Stir for 1 minute until fragrant, keeping the spices moving so they do not scorch.

  4. 04

    Coat rice and add broth

Add drained rice and stir for 2 minutes so the grains are coated with spiced onion oil. Return beef and potatoes, pour in reserved cooking liquid and enough hot stock to reach the rice package ratio, then add remaining salt.

  5. 05

Simmer covered until the rice is done

Bring to a simmer, cover tightly and reduce heat to low. Cook until liquid is absorbed and rice is tender; keep the lid closed and add a small splash of hot stock only if the centre remains firm.

    Rest, fluff and serve

Turn off the heat and rest covered for 10 minutes. Remove whole spices if desired, fluff gently with a fork, and serve with lemon and kachumbari.
