Tarta de Santiago

Galicia’s almond cake is built from nearly equal weights of ground almonds and sugar bound with eggs, scented lightly with lemon and cinnamon, and finished with icing sugar around the Cross of Saint James. This flourless version stays moist and granular rather than airy like sponge cake.

Method

  1. 01

    Prepare the pan and oven

Heat the oven to 175°C. Butter the base and sides of a 24 cm round springform pan with 10 g butter and line the base with parchment. Mix the 250 g ground almonds with the 2 g cinnamon so the spice is evenly distributed.

Whisk the eggs and sugar until pale

Whisk the 5 eggs with 250 g sugar for 4–5 minutes until pale, slightly thick and ribboning briefly from the whisk. Add the 5 g lemon zest and mix for 15 seconds.

Fold in the almonds without overmixing

Add the almond-cinnamon mixture in three additions, folding gently after each until no dry pockets remain. Stop as soon as the batter is uniform; overmixing knocks out too much air and makes the cake unnecessarily dense.

Bake until set but still moist

Pour into the prepared pan and level the surface. Bake at 175°C for 30–35 minutes until evenly golden, the centre springs back lightly, and a skewer inserted near the centre comes out with a few moist almond crumbs but no wet batter. Cool in the pan for 20 minutes.

Cool fully and mark the Cross of Saint James

Unmould and cool on a rack for another 40 minutes until room temperature. Place a Cross of Saint James stencil in the centre and sift the 30 g icing sugar evenly over the whole cake. Lift the stencil straight up to leave a clean dark cross silhouette.
