Classic layered tamagoyaki
A softly sweet, dashi-enriched rolled omelette cooked in thin layers until tender and fully set, then sliced thickly.

large eggs without shells
- 30 ml
unsalted dashi
- 18 g
granulated sugar
- 2 g
fine salt
- 10 ml
light soy sauce

Method

Mix the egg base
Whisk the 300 g eggs gently with 30 ml dashi, 18 g sugar, 2 g salt and 10 ml light soy sauce. Use a zigzag motion so the eggs combine without incorporating foam.

Strain for fine layers
Pass the seasoned egg mixture through a fine sieve into a spouted cup. Let the foam settle for 2 minutes so each layer cooks evenly and stays smooth.

Warm the square pan
Warm a clean square tamagoyaki pan over medium-low heat. Dip folded paper in the 15 ml oil and wipe a thin, even film over the base and sides.

Set the first layer
Pour in a thin quarter of the egg mixture and tilt the pan to cover the base. Cook until the bottom is set while the top remains glossy and softly wet.

Roll toward the handle
Use chopsticks or a thin spatula to fold the set edge toward the handle in three relaxed turns. Leave the roll at the far end and oil the exposed pan again.

Build the middle layers
Add another thin quarter of egg, lifting the existing roll so liquid runs underneath it. When the base sets but the surface is still glossy, roll again and repeat until all the mixture is used.

Set the centre safely
Turn the finished roll on all four sides over low heat until evenly golden. Check the thickest centre with a thermometer: it must reach 74°C with no liquid egg remaining.

Rest and slice
Rest the omelette on a board for 3 minutes, then slice it into thick pieces. Serve plain while warm, showing the clean, tender layers rather than adding a garnish.
