Method

  1. 01

    Dry and slash the chicken

Pat chicken completely dry. Cut 2–3 deep slashes through the thick flesh of each piece without striking bone so marinade reaches the centre and cooking stays even.

  2. 02

    Mix a thick marinade

Whisk yogurt, ginger-garlic, chile, coriander, cumin, garam masala, fenugreek, lemon, oil, and salt. The marinade must hold ridges; strain 30 minutes first if it flows.

    Pack marinade into the slashes

Work marinade deeply into every slash and around joints, then coat the surface in a 3–4 mm layer. Arrange in one layer, cover, and refrigerate below 4°C for 6–12 hours.

    Preheat the rack and oven

Heat oven to 240°C for at least 20 minutes with a rack in the upper third. Set a greased wire rack over a foil-lined tray so hot air reaches every side.

  5. 05

    Roast and turn

Shake off loose marinade and arrange chicken apart. Roast 15 minutes, turn each piece, brush with half the butter, and roast 10–14 minutes more until the thickest part reaches 72°C.

  6. 06

Broil to char and safe doneness

Move chicken 10–12 cm below the broiler, brush remaining butter, and broil 2–4 minutes, watching constantly, until charred in spots and every piece reaches at least 74°C.

    Rest before serving

Transfer to a warm platter and rest uncovered 5 minutes so the crust stays dry. Serve with mint-cilantro chutney, sliced onion, and lemon only after checking juices run clear at the joint.
