Flaky Chinese scallion pancakes

A chewy, layered wheat pancake rolled with scallions and oil, pan-fried until crisp and blistered, with a soy-vinegar dip.

Ingredients

  • 300 g

    all-purpose flour

  • 150 ml

    boiling water

  • 60 ml

    room-temperature water

  • 4 g

    fine salt for dough

  • 100 g

    scallions, finely sliced

  • 60 ml

    neutral oil for layers

  • 30 g

    flour for oil paste

  • 30 ml

    light soy sauce for dip

  • 15 ml

    rice vinegar for dip

  • 10 ml

    chili oil for dip

Method

    Mix flour and salt. Stir in boiling water, then room-temperature water; knead 5 minutes until smooth. Cover and rest 30 minutes.

    Stir 30 g flour into 45 ml of the oil to make a spreadable paste; reserve 15 ml oil for frying.

    Divide dough into 4 balls. Roll one to a 25 cm by 15 cm rectangle, brush with oil paste, scatter 25 g scallion, and roll from the long edge into a rope.

    Coil the rope, tuck the end underneath, flatten, and roll to a 16 cm round. Rest covered 10 minutes while shaping the other three; this relaxes the gluten.

    Heat a skillet over medium heat with 3.75 ml oil per pancake. Cook each pancake for 2–3 minutes per side, pressing and rotating occasionally, until blistered, crisp, deeply golden, and fully set at the centre.

  6. 06

    Whisk soy sauce, rice vinegar, and chili oil. Tap each hot pancake edge against the board for 10 seconds to separate layers, cut into wedges, and serve with dip.
